Most office catering in Fontana is lunch, because that is what the platforms sell. The meetings that actually need feeding are the early ones — the 7:30 quarterly review, the Monday safety huddle, the training that starts before anyone had time to eat. A tray of pastries does not hold a room until noon. A tray of chilaquiles does.
We cook chilaquiles trays (red or green salsa, eggs, queso fresco and crema), breakfast burrito trays (chorizo, machaca, ham or potato-egg-cheese, foil-wrapped one per person), huevos rancheros trays, huevos con chorizo, refried beans, breakfast potatoes, salsa roja and verde. Everything is packed hot in covered aluminum pans with serving utensils, plates and napkins, so the person who ordered does not become the person who sets up.
We are at 15891 Foothill Blvd, Fontana, CA 92335, a few minutes from the Sierra Ave and Cherry Ave office strips, the Kaiser corridor and the civic center. Because South Fontana is minutes away, we can hit a 5:30 or 6 AM crew delivery and still have the trays hot when the shift meeting starts.
